
Raw Tom (Super Gold) 130g
Raw Tom is a simple cheese, and yet encapsulates the two things critical to great cheese - fantastic milk, and real maturation techniques. On the outside is a dry, natural rind that is developed over a few months of ageing. On the inside is just pure milk, reflecting what the cows are eating through the seasons.
Made from unpasteurised cow's milk in the tradition of the Tomme cheeses made in the mountainous French Savoie region. He gets along famously with everyone. Tom likes being rubbed.
In November 2024, Raw Milk Tom won a Super Gold Medal and the Trophy for Best Australian Cheese at the highly regarded World Cheese Awards held in Portugal.

Semi-hard, natural rind
TALKING POINTS
- 4-5 months old at release, semi-hard, made from unpasteurised milk, uncooked curd.
- Musty, mould-dominated nose.
- Butter, mushroom aromas.
- Initial broth and mushroom, medium salt with a smoky, prosciutto/bacon flavour. Mellows out to salted butter flavour. Some acidity to balance the heavier flavours.
- Firm, dense moist paste with a slight flexibility.
